An Evening of Game, Tradition & French Wine

As the countryside settles into the rich colours of the season, we're delighted to present a carefully curated Game Dinner, celebrating the finest local produce and classic French gastronomy.

 

Our Head Chef, Bruno Pinon, has crafted a menu showcasing locally sourced wild game, including birds harvested from nearby shoots, prepared with the respect, skill and attention to detail that great seasonal ingredients deserve.

 

The evening begins with a comforting Chestnut & Parsley Velouté, paired with elegant Champagne Bauchet, before moving on to a beautifully rustic Wild Bird & Pistachio Terrine, complemented by cranberry and honey chutney and matched with a crisp Lions de Fabre Bordeaux Blanc.

 

For the main course, guests will enjoy Wild Boar Stuffed Cabbage with Wild Mushrooms and Bourguignon Sauce, a dish rich in flavour and tradition, perfectly accompanied by Boissonier Bourgogne Pinot Noir.

To finish, Bruno presents a spectacular Blackberry & Cinnamon Omelette Norvégienne, flambéed with rum and served alongside the luscious sweetness of Château Pontac Loupiac.

 

Each wine has been personally selected by Laurent Brydniak, owner of The Waggoners and passionate sommelier, whose knowledge of French vineyards brings another layer of authenticity to this unique dining experience.
